This is a Thanksgiving dinner staple at our house, and the houses of many who grew up in or around Amish Country as I did. As far as I know, there's only one company making the dried corn you need for this dish -- John Cope's. If your local store doesn't stock it, you can buy it at various places online.
1 7½ oz package John Cope's toasted Dried sweet corn
5 C milk
3½ T melted butter, plus additional for the baking dish
1 tsp salt or to taste
1 T sugar
4 eggs, beaten until well blended
Preheat oven to 375°. Butter a shallow 2-quart baking dish.
In a large mixing bowl, combine all ingredients. Mix well, pour into prepared dish. Bake until set and golden brown on top, about 1 hour. Serve hot.
