Easy, super speedy, and really delicious. The kids even kinda like it.
2 carrots, chopped
1 celery, chopped
1 onion, chopped
6-8 oz ham, cubed (optional)
1 T oil
4 cans beans, assorted, your choice
4 cans chicken broth
2 cans diced tomatoes
1 tsp thyme
1 tsp garlic powder
In a large saucepan, saute onion, carrot, celery and ham in oil until veggies wilt. Add broth.
Stir in drained beans and canned tomatoes, season and simmer for 10 minutes.
