This bread was one of my late friend Jenne's signature recipes. No matter who I bake this bread for, it's a big hit! The recipe as shown makes 3 loaves, so share and enjoy!
Preheat oven to 350°F.
4½ C sugar
1½ C vegetable oil
1 C water
6 eggs
2 tsp vanilla extract
1 large (29 oz) or 2 small (15 oz) cans pumpkin puree
Combine the above ingredients in a very large bowl.
5 C flour
3 tsp pumpkin pie spice*
2 tsp salt
3 tsp baking soda
Combine the above ingredients in a smaller bowl.
Stir the dry ingredients into the wet ingredients and combine thoroughly.
Pour into 3 greased loaf pans. Bake at 350°F for 60-70 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Carefully run a flexible spatula around the edges of the loaves and let cool completely in the pans on a rack.
*Pumpkin pie spice: Buy premade, or use 2 tsp cinnamon, ½ tsp ginger, and ¼ tsp each allspice and nutmeg.
