1 to 1½ pounds ground beef
A little oil
Some chopped or dried onion
Some chopped or powdered garlic
About 1 C edamame, cooked
About 1 C sliced carrots
1 can chopped tomatoes with juice (puree if your kids hate chunks of cooked tomato like mine do)
2 tsp curry powder
1 T soy sauce
Pinch of salt
Brown the beef in the oil with the onion and garlic. Stir in the remaining ingredients. Cover and simmer 30 minutes.
