I got this from Casual Kitchen. It's fast and easy and filling. What's not to like?
3 T olive oil
1 onion, chopped
3-4 stalks celery, chopped
1 ½ tsp dried thyme
A dash of salt
½ tsp pepper, or more to taste
1 bay leaf
½ lb kielbasa or other sausage, chopped into pieces
3 C water
One 15-oz can navy beans or white beans, drained and rinsed
Heat oil in a large pot over medium heat. Add onions, celery, thyme, salt, pepper and bay leaf and saute on medium for 5-7 minutes. Add the kielbasa, water and beans and bring to a boil. Simmer for 45 minutes. Serve immediately.
Serves 4 easily. Can be easily doubled (which I normally do).
